
Tonight’s dinner, as you can see from the picture above, was amazing! This recipe came from eMeals clean eating meal plan for 2 from last week. It was listed under their super fast options, which are good for me this week since I am working longer days so I decided to give it a go! I like the 2 servings because I can take the other half for lunch the next day so I’m not wasting food. If you try this out, let me know what you think in the comments! Chicken with Balsamic-Strawberry Sauce
For the Chicken:
- 2 boneless, skinless chicken breasts
- 1/4 tsp salt, 1/4 tsp pepper
- 1 clove garlic, minced
- 1 tsp fresh or dried rosemary
- 1 Tbsp olive oil
- 1 cup sliced fresh organic strawberries
- 2 Tbsp balsamic vinegar
- 1 Tbsp honey
Sprinkle chicken with salt and pepper; rub with garlic and rosemary. Heat oil in a large, nonstick skillet over medium-high heat; add chicken. Cook 2 to 3 minutes on each side or until done; remove from skillet, and keep warm. Add strawberries, vinegar, and honey to skillet; cook 8 to 10 minutes, stirring occasionally, until sauce is slightly thickened. Serve over chicken.
For the Wild Rice and Almond Green Beans:
- 1/2 cup uncooked wild rice blend
- 1 Tbsp olive oil
- 1 clove garlic, minced
- 1/2 lb green beans, trimmed
- 1/4 tsp salt, 1/4 tsp pepper
- 3 Tbsp sliced almonds, toasted
Prepare rice according to package directions. Meanwhile, heat oil in a large skillet over medium heat; add garlic and green beans. Sauté 2 minutes or until garlic is tender; add 1⁄4 cup water, salt and pepper. Cover and steam 5 minutes or until green beans are tender; drain and sprinkle with almonds before serving.
